Polos
This is one of those dishes that attracts you with the first taste. Jackfruit is incredibly versatile and can be turned into a flavorful dish regardless of its life stage. This dish is a vegan favorite as it is packed with nutrients and fibre.
As the name suggests, young or plain jackfruit curry is made from young jackfruit which is hard and the seeds are not yet fully formed. As with all Sri Lankan dishes, various spices are added: roasted curry powder, red chili powder, turmeric, tamarind juice, cardamom and cinnamon. All of that is blended with coconut milk and they all play a role in creating a thick, aromatic sauce around the creamy jackfruit.
Appa
Amusingly named, carriages involve nothing jumping. Appa is an all time favorite in Sri Lanka. This is a foolproof dish for satisfying on-the-go hunger, and you can find this local dish at street food corners and in luxury hotels.
They are made from fermented rice flour dough mixed with coconut milk, salt and a little yeast. If you want it the traditional way, a pinch of Sri Lankan toddy adds to the flavor. The dough is stirred in a small pan, giving it a bowl-like shape. The underside is soft and the edges are thin and crunchy. Cracking an egg into the middle of the hopper really takes the flavor to the next level.

Indiappa
This is a typical Sri Lankan breakfast that is known for being soft and easy to digest, with a texture similar to vermicelli. To make indiappa, wet rice flour is woven into small round shapes using a string hopper maker, a specially designed piece of equipment. This is then steamed for about half an hour.
The string hopper is available in two colors, depending on the type of rice used: white and pink. However, other colors, such as blue, red, and yellow, are also offered, using natural dyes such as pea, hibiscus flower essence, and vegetable juices such as beet and carrot juice.
Kiri Kos
In Sri Lankan cuisine, rice is a staple food. But jackfruit takes second place in terms of popularity. This fruit can be prepared in many ways with a variety of flavours, but kiri kos is a jackfruit dish that uses the ripe fruit and small amounts of chili peppers and other spices. Its creamy texture due to coconut milk helps it blend and blend with almost anything that comes with it.

Kottu
Perhaps the most popular food among tourists is kottu, which can be found at street food stalls.
